Breakfast for dinner is one of my favorite meal options so when I spotted pumpkin pancake mix at Trader Joes I knew it would be the perfect weekday treat (and easy!). Instead of pancakes I opted to dust off my girlfriend's waffle maker and give it a test run. Maybe I was extra hungry but I swear these were some of the best waffles I've ever eaten! Not too pumpkiny, with just the right amount of spice and sweetness. Simply add butter, maple syrup, a side of sliced bananas and enjoy! Yes mine were just out of a box but if you'd rather make pumpkin pancakes or waffles from scratch, this recipe sounds particularly delicious and (somewhat) healthy. Let me know if you make them, I'm curious to try them myself!

Yum! I love baked pumpkin anything. I look forward to my mom's pumpkin bread every year. I have never had pumpkin pancakes or waffles tho. Must try them! Neat photo today! How did you do that? Also, don't you enjoy eating a simple food off a fancy plate?! I do anyway! It adds to the experience! hehe ;)

What a wonderful idea for supper! And I think mixes right out of the box were designed to make our lives easier-no shame in that! I can't tell you how many average cakes I've baked from scratch, only to have inexpensive box cakes be moist and magical each and every time!
Pumpkin flavored anything is one of the biggest reasons I love fall! I usually just go for the pumpkin muffins for breakfast, but I should try the waffles...too bad I don't have a Trader Joe's close anymore, it was my favorite store!
Oh wow. I've never had pumpkin waffles or pancakes, but they sound glorious. I need to try them right away. I'll probably go with the TJ's box, but either way I'll let you know how it goes!

I was just talking about pumpkin waffles! We had chicken and waffles the other night (my first time attempting that combo) and we all got to talking about making pumpkin waffles. I will have to try this. Yum! And awesome picture btw!
